The Best Boxed Chocolate Cake I’ve Ever Tasted

It’s been a while since I’ve written a blog post.
Mostly because I discovered that baking everything from scratch is highly impractical and if I’m being completely transparent, the lack of traffic to my blog was a little discouraging too. After putting so much time into developing recipes, baking, photographing, editing, and writing… I slowly stopped posting consistently.
But I never stopped baking!
Over the last few months, I’ve actually been having fun experimenting with boxed cake and pastry mixes. Instead of making everything completely from scratch, I’ve been playing around with different ingredients to see if I can make boxed desserts softer, moister, richer, and just generally taste a little more like something you’d pick up from a bakery.


I Had Been Craving a Really Good Chocolate Cake
For a few weeks, I couldn’t stop thinking about chocolate cake.
But I didn’t want just any chocolate cake. I wanted that incredibly moist, buttery chocolate cake where you can actually taste something besides sugar.
I’ve bought single serving sliced chocolate cake from the grocery store before and I’m almost always disappointed. It’s usually extremely sweet, I can’t taste any butter, and I’m left with this deeply unsatisfying feeling of:
Well…those calories weren’t worth it.
Which, as a lover of baked goods is deeply disappointing.
So, imagine my surprise when, while doom scrolling on Instagram, I came across @simplyblvckapothecary.
First of all, his personality is absolutely delightful. But more importantly for today’s purpose, he shared an incredibly simple way of upgrading boxed cake mix.
And apparently, I wasn’t the only person intrigued because I started seeing others make his boxed cake version everywhere on social media.

The Viral Box Cake Upgrade
The original recipe used a yellow or butter cake mix. Ironically, the creator isn’t particularly fond of chocolate cake.
I, however, was on a mission.
So I bought a box of chocolate cake mix and used his basic method instead.
Rather than preparing the cake according to the directions on the box, the upgraded version uses:

For the cake:
1 box chocolate cake mix
4 large eggs
1 stick (½ cup) butter, melted
1 cup milk
Vanilla extract or vanilla paste
For the top:
Betty Crocker Hershey’s chocolate frosting
He recommends baking the cake in a 9 × 11-inch baking dish at 315°F for approximately 36–37 minutes.
Mine needed considerably longer cooking time at 315°F.
At around 36 minutes, my chocolate cake wasn’t quite finished, so I left it in the oven for another 10 minutes. My total baking time was about 46 minutes.
If you’re considering baking this viral box cake version; I would start checking your cake around the original 36-minute mark and continue baking until a toothpick inserted near the center comes out clean or with a few moist crumbs.
Once the cake was completely cool, I spread approximately 1/3 of a container of Betty Crocker Hershey’s chocolate frosting (lightly warmed in the microwave) over the top.
And then I tasted it.


This Cake Was My Kryptonite
If you’ve read some of my other posts, you already know that while I am a complete and total lover of baked goods and sugary things, I’m also on a weight-loss journey.
This chocolate cake tested my willpower!
It was so moist. I could actually taste the butter, and because I only used a relatively thin layer of frosting, the chocolate frosting complemented the cake without making the entire thing overwhelmingly sweet.
I found myself negotiating with myself over exactly how large a “reasonable” slice of cake should be at every serving.
That’s when you know you’ve made something dangerous.
Even members of my household who aren’t particularly big sweet eaters thought the cake was delicious and incredibly moist.
And that settled it for me.


I Don’t Think I’m Going Back
This cake has actually inspired a new little baking experiment for me.
Instead of feeling like everything has to be made completely from scratch, I want to see what happens when I take convenient boxed cake and pastry mixes and elevate them with a few simple ingredients.
Can I make them moister? Richer? More buttery? More bakery-like without spending half the day in the kitchen?
Because sometimes I want homemade cake.
And sometimes I want to open a box, doctor it up, put it in the oven and get on with my life.
After tasting this chocolate cake, I can confidently say one thing:
I will never make chocolate cake according to the instructions on the back of the box again.
Actually, I may never make any boxed cake according to the instructions again.
