Lately, I’ve been craving those warm, gooey brownies you get at restaurants, the kind that are slightly flat, soft in the center, and perfect with a scoop of vanilla ice cream. They’re rich, chocolatey, and exactly what you want when you need a comforting dessert.

I’ve adopted a few brownie recipes to create this small batch brownie recipe that’s easy to make and gives you that same warm, gooey texture at home. It’s simple, quick, and perfect when you want something sweet without making a full pan.

Gooey Brownies (Perfect for Ice Cream)

Small batch brownie recipe that’s easy to make and gives you that same warm, gooey texture at home.

Ingredients
  

  • 30 g all-purpose flour ¼ cup
  • 35 g unsweetened cocoa powder about ⅓ cup
  • ¼ teaspoon salt
  • 70 g unsalted butter 5 tablespoons
  • 100 g sugar ½ cup
  • 1 large egg + 1 egg yolk
  • 1 teaspoon vanilla extract
  • Coffee Component key flavor booster
  • 1 tablespoon of liquid with strong brewed coffee

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Line a small pan
  3. Bloom the coffee
  4. Mix: instant coffee + hot water. Set aside.
  5. Melt butter in a bowl (microwave or stovetop). Let cool slightly (warm, not hot).

  6. Mix wet ingredients
  7. Whisk together: Melted butter and sugar
  8. Then whisk in:
  9. egg + egg yolk
  10. vanilla
  11. coffee mixture
  12. Mix until smooth and slightly glossy.
  13. Add dry ingredients
  14. Whisk together: flour, cocoa, salt
  15. Add to wet ingredients and mix just until combined.
  16. Pour into prepared pan.
  17. Bake 18-22 minutes until: edges are set and center is slightly soft (do not overbake).
  18. Cool
